Preserved Lemons Recipe

Preserved lemons are incredibly quick and easy to make at home and far more affordable than store bought. 

Use them in your cooking to elevate your dishes especially soups, stews, sauces, and more!

Makes 2 small – medium jars

Ingredients
  • 6-8 lemons
  • 12-16 heaped teaspoons salt
  • Extra lemons for juicing
  • Bay leaves or peppercorns (optional)
Method

1.    Sterilise your jars.
2.    Trim the ends off the lemons, then cut each lemon in half. 
3.    Score each half into quarters, ensuring the lemons remain attached at the bottom.
4.    Place one heaped teaspoon of salt into each lemon half.
5.    Place lemon halves into the sterilised jars, pressing down firmly to ensure the jar is packed. 
6.    Add in any aromatics e.g. bay leaves of peppercorns if using. 
7.    Top up jars with freshly squeezed lemon juice then seal. 
8.    Store in the fridge for 3-4 weeks before using. Once opened use within 6 months.
