Aunty Dulcie’s Lemon Tea Cake

This delicious lemon tea cake is easy to make and perfect with a cup of tea or coffee. 


•    8 oz sugar (200g)
•    30 gm butter (75g)
•    8 oz flour (200g)
•    1 large egg
•    1/4-pint milk (approx. 145ml)
•    1 teaspoon baking powder
•    Grated rind of one lemon

Lemon syrup: Juice of one lemon mixed with 1 teaspoon of caster sugar 

1.    Preheat oven to 180 degrees 
2.    Grease (or spray) a loaf tin
3.    Beat butter, sugar, rind, and egg together 
4.    Sift in flour and baking powder, then add milk 
5.    Pour into prepared loaf tin 
6.    Bake for 1 1/4 hours (around 45 mins if fan bake) 
7.    When cooked, prick the top and pour over the lemon drizzle while the loaf is still hot
