Delicious Oats for Winter Wellness
Warm up on cooler mornings with this yummy apple/pear and cinnamon oats! Top it off with a generous serving of nut butter, fresh berries, and caramelised banana, and you've got a breakfast that is both nutritious and delicious. This recipe serves one person, but double or triple to make enough for the whole family!
Ingredients
- 1 small apple or pear (diced or grated) – about 1 cup
- ½ - 1 teaspoon of cinnamon – depending on your taste
- ½ cup rolled oats
- 1 cup milk of choice (vanilla soy milk is great for added flavour)
- Butter
Suggested toppings (optional):
- Caramelised banana (this is a must!)
- 1 Tablespoon Nut butter
- Handful of berries
- Honey or maple syrup
- Yoghurt
Method
- To begin, finely dice or grate the fruit and add it with the cinnamon into the pot to brown. Add a small amount of butter to brown the apple/pear to give this a richer taste. Add a touch more butter or water if the fruit starts to stick.
- Cook for around 2-3 minutes and once the fruit is slightly soft, add the milk and oats into the pot and mix.
- Let this gently simmer for 5 minutes on a low heat, stirring occasionally. Add a little milk or water to stop it burning if it starts to stick.
- For some extra winter warmth, spice it up by adding some ginger to the pot.
- Remove the porridge from the pot and add to a bowl ready for toppings.
- Some of the best toppings include nut butter, fresh or frozen berries, or caramelised fruit, a drizzle of honey or maple syrup, or melt a few squares of chocolate on top for added indulgence!
- To caramelise the banana, slice it into rounds or lengthways about 1.5cm thick.
- Add banana to a non-stick pan with a small amount of butter (about 1-2 teaspoons per banana) to brown. If you prefer a crunchier texture, add a sprinkle of brown sugar to the pot too.
- Brown the remaining side and remove the bananas from the pan.
- Add the caramelised bananas to the oats along with your other toppings.
- Add yoghurt or extra milk and enjoy!
