Rhubarb Crumble Slice
This Rhubarb Crumble Slice is a delicious, easy recipe to try at home. With a buttery oat base, tangy rhubarb filling, and crisp crumble topping, it’s the perfect slice to enjoy with a cup of tea or pack into lunchboxes. Simple to make and full of flavour, it’s a great way to use fresh rhubarb from the garden or a bunch from the market.
Ingredients
Base:
- 125g butter, melted
- 1 cup brown sugar
- 1 cup plain flour
- 1 tsp baking powder
- 1/2 cup rolled oats
Filling:
- 3 cups chopped rhubarb
- 1/2 cup sugar
- 1 tbsp cornflour
- 1 tsp vanilla essence
Crumble topping:
- 1/2 cup rolled oats
- 1/4 cup brown sugar
- 50g butter, cubed
Method
- Preheat oven to 180°C and line a 20x30cm baking tray with baking paper.
- Combine the base ingredients - melted butter, brown sugar, plain flour, baking powder, and oats until crumbly. Press into the tray and bake for 10-12 minutes.
- In a saucepan over medium heat, combine rhubarb, sugar, cornflour, and vanilla essence.
- Cook for 5–7 minutes until slightly softened. Spread evenly over the base.
- Rub the cubed butter into the oats and brown sugar until the mixture resembles coarse crumbs and sprinkle over the rhubarb.
- Bake for 25–30 minutes until golden and crisp.
- Cool completely before cutting into slices.
