Sicilian Orange Cake
This moist, zesty orange cake makes the most of the winter citrus harvest. Made with whole oranges and a hint of almond, it's full of flavour and lovely with a cuppa!
Makes one 20cm cake
Ingredients
- 1 large orange, seeds removed and cut into chunks
- Zest of 1 extra orange
- 3 large eggs
- 200g caster sugar
- 125ml neutral oil e.g. canola
- 125g Greek yogurt
- 200g plain flour
- 2 tsp baking powder
- 50g almond meal
Method
- Preheat your oven to 180°C. Grease and line a 20-22cm cake tin with baking paper.
- Blitz the orange chunks in a food processor or blender until smooth, set aside.
- In a large bowl, beat eggs and sugar together until light and fluffy.
- Add in the oil and yogurt and mix until smooth.
- Mix in the orange puree and the extra zest.
- Add the remaining dry ingredients - flour, baking powder and almond meal, to the mixture.
- Pour the batter into the baking tin.
- Bake for approx. 45-50 minutes or until a skewer comes out clean.
- Cool in the tin for 10 minutes, then move to a wire rack.
