Feijoa Crumble Slice
Autumn in New Zealand means feijoa season! This slice is perfect paired with a cup of tea or coffee on a cool autumn day.

Ingredients
- 200g butter
- 1 cup caster sugar (3/4 cup for crumble and ¼ cup for feijoa mixture)
- 1 tsp vanilla essence
- 300g plain flour
- 3 tsp baking powder
- 3 tbsp lemon juice (approx. 1 lemon juiced)
- 70g desiccated coconut
- ½ tsp cinnamon
- 500g feijoas, flesh only and roughly chopped.
Method
- Preheat the oven to 180°C and line a slice tin with baking paper
- Cream butter and ¾ cup of the sugar together.
- Add in flour, baking powder, lemon juice, vanilla and coconut and mix until combined.
- Place ¾ of the mixture into the base of the slice tin, pressing down evenly. Set the rest of the mixture aside.
- Bake for 10 minutes or until slightly golden.
- In a bowl mix together the feijoas, remaining sugar (1/4 cup) and cinnamon.
- Spread feijoas over the base and top with the remaining crumble mixture.
- Bake for 25-30 minutes or until golden.
- Allow to cool and cut into slices.
