Creamy Salami Pasta with Fresh Rosemary
A quick and comforting meal with just the right kick of spice. This pasta dish combines the rich flavors of tomato passata and creamy sauce with the fresh, aromatic touch of rosemary.

Serves 4
Ingredients
- 1 x hot cacciatore salami (approx. 160g) or substitute for chorizo or similar. If you prefer no spice, try a mild cacciatore salami).
- 40 g butter
- 1 onion
- 2 cups tomato passata
- ½ cup cream
- 500g pasta – e.g. penne, spaghetti, rigatoni
- Handful grated parmesan
- Fresh rosemary sprigs, leaves removed and finely chopped
Method
- Peel wrapping off salami (if any), chop into smaller chunks then chop in a food processor or blender until minced.
- Finely dice, onion
- Melt butter in a sauté pan, add onion and salami and sauté until onion is soft
- Add in passata and cream and simmer for 10 minutes
- While sauce is simmering, cook pasta as per packet instructions
- Drain pasta, reserving ¼ cup of pasta water
- Add pasta water to the sauce, then fold through pasta and grated parmesan
- Serve with lashings of fresh rosemary sprinkled on top
