Easy Summer Garden Pasta Sauce
A simple way to use fresh tomatoes, courgettes, capsicum and garden herbs - perfect for freezing or bottling.
Ingredients:
- 2 kg ripe tomatoes chopped (any mix)
- 1 large onion, chopped
- 3-4 cloves garlic
- 1 courgette, diced
- 1 red capsicum, chopped
- Olive oil
- Fresh herbs: basil, oregano, thyme
- 1 tsp sugar
- Salt, pepper
- Optional: chilli flakes or a splash of balsamic vinegar
Method:
- Heat oven to 180°C.
- Spread tomatoes, onion, garlic, courgette, and capsicum on a tray.
- Drizzle with olive oil and roast for 40–45 minutes until soft and slightly caramelised.
- Tip everything into a large pot, add herbs, sugar, salt, and pepper, and simmer for 20–30 minutes.
- Blend to your preferred texture (smooth or rustic).
- Cool completely before freezing in portions, or spoon into sterilised jars and store in the fridge.
