Chocolate Zucchini/Courgette Muffins
Sneak some veggies into something sweet with these yummy Chocolate Zucchini Muffins - perfect for school lunchboxes!
Ingredients
- 1 ½ cups plain flour
- ½ cup cocoa powder
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- 2 large eggs
- 100g butter, melted and slightly cooled
- ½ cup brown sugar
- ¼ cup caster sugar
- 1 tsp vanilla essence
- 1 cup finely grated zucchini (approx. 2 zucchini), squeeze out a little moisture
- ½ cup milk
- ¾ cup chocolate chips
Method
- Preheat your oven to 180°C. Line a 12-hole muffin tin with paper cases or lightly grease.
- In a large bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, beat the eggs, melted butter, both sugars, and vanilla until smooth.
- Stir the grated zucchini into the wet ingredients.
- Add the dry ingredients to the wet ingredients along with the milk. Stir gently until just combined.
- Fold in chocolate chips.
- Spoon the batter evenly into the muffin cases.
- Bake for approx. 20 minutes.
- Cool in the tin for 5 minutes, then move muffins to a wire rack.
