Serves 4-5 as a side.
Ingredients
- Assortment of tomatoes – approx. 600grams (different colours look great as do a variety of sizes)
- Handful fresh basil from the garden
- 125g ball of burrata
- Drizzle Extra Virgin Olive Oil
- Salt and Pepper to season
- 2 tbsp balsamic glaze
Method
- Slice the tomatoes and arrange on a serving platter.
- Place the burrata ball on top of the tomatoes. Alternatively, you can slice or tear the burrata into pieces and lay over the tomatoes to save breaking in to it when serving.
- Season with salt and pepper and a drizzle of extra virgin olive oil.
- Drizzle over the balsamic glaze.
- Sprinkle over fresh basil leaves.
- Serve immediately, breaking into the burrata as you serve, and enjoy!
