Roast Turkey with Cashew Stuffing Recipe

Serves 8-10

Ingredients: 

  • 4-5kg turkey
  • 2 tablespoons olive oil
  • 30g butter
  • 1 onion, chopped
  • 2 cloves crushed garlic
  • ½ teaspoon ground cardamom
  • ½ teaspoon ground cumin
  • 1 cup natural cashews
  • 1 red capsicum, chopped
  • 250g pork mince
  • 250g veal mince
  • 125g ham, chopped
  • ½ cup breadcrumbs
  • 1 tablespoon fresh parsley, chopped
  • ½ tablespoon fresh chives, chopped
  • 1 egg
  • 1 large oven bag 

Method:

  1. Preheat oven to 150°C
  2. Prep turkey by removing neck and washing the turkey well then patting dry. Tie legs together, brush olive oil all over the turkey and set aside. 
  3. Melt butter in a pan on medium heat. Add chopped onion, garlic, cardamon and cumin. Stir and cook until onion has softened. 
  4. Add in the cashew nuts and capsicum. Continue to cook for a few more minutes. Set aside and allow to cool slightly. 
  5. In a large bowl, combine the pork and veal mince. Add in the ham, breadcrumbs, fresh herbs, and egg. Then mix in the cashew mixture. Mix well. 
  6. Fill turkey with the cashew stuffing. You can also add some stuffing up under the skin to keep it tender. Place turkey inside the oven bag and place on a deep sided oven tray. Add some water into the base of the tray to create a water bath. 
  7. Bake in the oven for about 4 ½ - 5 hours or until tender and cooked through. 
  8. Remove from oven and reserve some pan juices to add to your gravy.
  9. Allow to rest then, carve, and serve!
