Roasted Cauliflower & Leek Soup with Fresh Thyme
Creamy, comforting, and full of flavour, this Cauliflower, Leek & Thyme Soup is the perfect way to warm up on a chilly day. Simple to make and a nourishing winter favourite the whole family will love.
Serves 4
Ingredients
- 1 cauliflower, chopped into florets
- 2 leeks, sliced
- 3 cloves garlic, peeled
- 1 tbsp olive oil
- 1 tsp sea salt
- Cracked black pepper
- 1 litre vegetable or chicken stock
- 3-4 sprigs of fresh thyme (plus extra to garnish)
- ¼ cup cream
Method
- Preheat oven to 200°C (fan bake).
- Spread the cauliflower florets, sliced leeks, and garlic cloves on a lined baking tray. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat.
- Roast for 25–30 minutes, until tender and lightly golden.
- In a large pot, add roasted vegetables, stock, and fresh thyme. Bring to a simmer and cook for 10–15 minutes.
- Remove thyme sprigs. Use a stick blender (or transfer in batches to a blender) and blend until smooth. Adjust thickness with more stock or a splash of water if needed.
- Stir in cream and adjust seasoning with more salt and pepper if required.
- Serve hot, garnished with fresh thyme, cracked pepper, and a drizzle of olive oil or cream. Enjoy!
