Festive Shortbread

Makes approx. 18 biscuits
Ingredients
- 250g butter softened / room temp
- ¾ cup icing sugar
- 2 cups plain flour
- 100g natural pistachios, roughly chopped (reserve some for decoration)
- 100g dried cranberries, roughly chopped (reserve some for decoration)
- 180g white chocolate
Method
- Mix butter, icing sugar, flour, pistachios, and cranberries together in a cake mixer with a dough hook attachment, or by hand until a dough forms.
- Turn out onto a lightly floured bench and form into a roll.
- Cover with cling film and refrigerate for at least an hour.
- Preheat oven to 180deg.
- Remove from fridge, cut into slices, and bake on a lined baking tray for approx. 15 minutes or until the edges turn golden. Allow to cool completely.
- Melt white chocolate in short bursts in the microwave, or with the double boiler method.
- Dunk shortbread into the white chocolate to coat half in chocolate. Sprinkle with reserved cranberries and pistachios.
