Gingerbread Star Tree


A gingerbread star tree is a festive and fun creation made from layers of spiced gingerbread stacked together to form a tree shape. 

It is both a delicious treat and a beautiful Christmas centrepiece that the kids will enjoy making year after year!

Gingerbread Star Tree

Makes approx. 1 large tree or 2 smaller trees 

Ingredients
  • 50g butter
  • 2/3 cup golden syrup
  • ¾ cup brown sugar
  • 1 large egg
  • 3 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp ground cloves
  • 1 tsp nutmeg
  • 1 tsp all spice
  • 1 tsp baking soda
  • 3 ½ cups plain flour
Decoration
  • 180g white chocolate, melted
  • Assorted sweets for decoration
     
Method
  1. Melt butter gently in a large pot. Add in golden syrup and heat the mixture enough to soften the syrup. 
  2. Remove the pot from the heat and allow to cool slightly before adding in the spices and egg. Mix well to combine. 
  3. Sift the baking soda and flour and add to the wet ingredients and gradually mix to form a dough.
  4. Wrap dough in cling film and refrigerate for 30 minutes. 
  5. While dough is chilling preheat oven to 170deg.
  6. Roll dough out on a lightly floured surface to 5mm thick. 
  7. Using 5 or 6 different sized cookie cutters, cut out 3 or 4 shapes of each size.
  8. Place shaped on lined baking trays and bake for approx. 10-12 minutes or until lightly golden. 
  9. Allow to cool completely. 
  10. To assemble, place the largest star shapes on top of each other, joined together with a small amount of melted chocolate. 
  11. Repeat with remaining sizes from largest to smallest. If the shapes are starting to slide off or it is getting tricky to handle, place the gingerbread tree upright in the fridge to allow the chocolate to set then continue assembling. 
  12. When the tree is formed and chocolate has set, decorate with remaining chocolate and sweets.
