Kate’s Famous Pavlova

Regardless of the ongoing battle with the Aussies as to who owns the Pav, it has, and always will be, a kiwi favourite. This is very old recipe never fails to please – and is probably one of the easiest pavlovas to make!


  • 3 egg whites
  • 2 cups caster sugar
  • 2 teaspoons vanilla
  • 2 teaspoons brown vinegar
  • 6 Tablespoons of warmish water


  • Preheat oven to 150 degrees (350F)
  • Add all ingredients into a cake mixer bowl
  • Beat until really thick (should make peaks when pull spoon out)
  • Line a tray with baking paper
  • Draw a 22 cm circle on the baking paper
  • Spread pavlova to within 2 cm of the edge and keep shape round and even
  • Bake in oven for 30 minutes
  • Turn off oven and leave pavlova inside for an hour (can leave fan on with no heat)
