When should I trim my espalier pear tree? 

Your espaliered pear tree can be pruned as soon as leaf fall has finished. This allows for easier access to branches. Pear trees are what is termed "spur bearing" which means the fruit is produced on spurs (short, stocky shoots) that develop on branches. 
Train horizontal branches that create the espaliered effect along the support wire. From here, encourage spurs to develop, ideally spaced 80 to 120 mm apart. 
Every 5-6 years replace the existing fruiting spurs with new spurs that appear. As pears grow very vigorously, do not be afraid to remove all surplus growth that will not produce fruit. 
An espalier usually has two or three tiers (layers/rows), but more are possible with trees like pears which are vigorous growers.
