Diane's Thai Pumpkin Soup

Diane Goulding from our Daltons team has shared her tasty Thai Pumpkin Soup. It is a family favourite that her boys love and is perfect on a cold winters day.


  • 1 x 2kg pumpkin, peeled and diced
  • 400ml coconut milk
  • 1 onion
  • 1 Tablespoon brown sugar
  • 1 Tablespoon fish sauce
  • ¼ cup parsley
  • 1 Tablespoon lemongrass or ½ tablespoon of lemon rind
  • 2 cloves of crushed garlic
  • 2 cups water
  • 1 Tablespoon olive oil
  • Pinch of chilli powder
  • Salt and pepper to taste


  • In a large pot gently sauté onion, garlic, and brown sugar in the oil for about 8 minutes
  • Add all the other ingredients except the herbs
  • Simmer for about 20 mins until pumpkin is tender
  • Add herbs and mash or blend together
  • Serve with crusty bread
