Diane's Thai Pumpkin Soup
Diane from our Daltons team has shared her tasty Thai Pumpkin Soup. It is a family favourite that her boys love and is perfect on a cold winters day.
INGREDIENTS
- 1 x 2kg pumpkin, peeled and diced
- 400ml coconut milk
- 1 onion
- 1 Tablespoon brown sugar
- 1 Tablespoon fish sauce
- ¼ cup parsley
- 1 Tablespoon lemongrass or ½ tablespoon of lemon rind
- 2 cloves of crushed garlic
- 2 cups water
- 1 Tablespoon olive oil
- Pinch of chilli powder
- Salt and pepper to taste
DIRECTIONS
- In a large pot gently sauté onion, garlic, and brown sugar in the oil for about 8 minutes
- Add all the other ingredients except the herbs
- Simmer for about 20 mins until pumpkin is tender
- Add herbs and mash or blend together
- Serve with crusty bread
