Val's Homemade Tomato Relish
Preserve the taste of summer with this homemade tomato relish - a popular recipe with Val's family and friends.
It is the perfect accompaniment for burgers, cheese boards, sandwiches, or even grilled meats. Made with fresh tomatoes, onions, and a blend of spices, it is easy to make and packed with flavour.

Makes 4 x 500ml medium jars
Ingredients
- 2kg ripe tomatoes (any variety)
- 5 onions
- 2-6 dried chillies in a cheesecloth bag (for easy removal after cooking) or 1 tsp chilli flakes (optional)
- 680g sugar
- 600ml white or malt vinegar
- 2 tbsp salt
Paste:
- 1 tbsp curry powder
- 2 tbsp cornflour
- 2 tsp mustard powder
- 1-2 tbsp malt or white vinegar
Method
- Sterilise your jars.
- Cut a small cross on the bottom of each tomato and place in a large bowl.
- Pour boiling water on top and leave for a minute or two.
- Drain and peel off skins.
- Roughly chop tomatoes and onions and add to a large saucepan.
- Add chillies or chilli flakes if using, sugar, vinegar, and salt.
- Bring to the boil and cook for 1 hour then remove from the heat.
- Mix paste ingredients together and add to relish, stirring to thicken it.Pour into sterilised jars and seal. Once opened refrigerate and use within 3 months.
