Kate’s Very Famous Pavlova
Regardless of the ongoing battle with the Aussies as to who owns the Pav, it has, and always will be, a kiwi favourite. This is very old recipe never fails to please – and is probably one of the easiest pavlovas to make!
INGREDIENTS
- 3 egg whites
- 2 cups caster sugar
- 2 teaspoons vanilla
- 2 teaspoons brown vinegar
- 6 Tablespoons of warmish water
DIRECTIONS
- Preheat oven to 150 degrees (350F)
- Add all ingredients into a cake mixer bowl
- Beat until really thick (should make peaks when pull spoon out)
- Line a tray with baking paper
- Draw a 22 cm circle on the baking paper
- Spread pavlova to within 2 cm of the edge and keep shape round and even
- Bake in oven for 30 minutes
- Turn off oven and leave pavlova inside for an hour (can leave fan on with no heat)
