Broccoli Salad by Plantation


Serves 4-5

  • 1 x head of broccoli (chopped up small)
  • 300g bacon (optional), chopped up 
  • 100g pine nuts 
  • 250g chopped finely dried cranberries or craisins mix
  • 1 spring onion (chopped)
  • Lemon juice
  • Olive oil



  1. In 1 tablespoon of olive oil, cook bacon until crisp and broken into small pieces
  2. Toast pine nuts 
  3. Mix all ingredients together in a bowl and toss well
  4. Dress to taste with lemon and olive oil
  5. Enjoy as a cold salad or it can be served warm.
